Eat me!

IMG_0529eBecause last week I was doing a lot of cooking for Maisie’s gym I wanted to make sure that Eammon wasn’t confused as to what was available for him to eat and I didn’t want him saying that he couldn’t find anything good so this was what our fridge looked like last week.  Thankfully I have a second fridge out in the garage where I could store all the ingredients and food that I didn’t want him getting into.   One thing I will say is that between the Zucchini & Spinach Lasagna, Salad greens, dumplings, Lamb Curry, Saag Aloo, and Spicy Asian Ribs the boy had some variety there.

I mean could you pass up this Zucchini & Spinach Lasagna if it was offered to you?  I know that I can’t get enough of it.  Click on the picture and check out the recipe and make this as you’ll love it!IMG_1804[2]

She loves it!

IMG_0524eI love watching my little smartie girl working on her homework and she loves doing it.  She is one dedicated little girl and most days she opens up her reading before we even pull out of the school parking lot and many days has all her homework completed before we arrive home.  Maisie adores school, playing school and learning.  What more could a proud Mama ask for!!

When I looked at the picture above it looked very familiar so I went searching through the blog and found the following picture.IMG_8506a This picture was taken in March 2010 when Maisie was only four years old and in Kindergarten.  Now she’s a “big” girl, almost six years old, a second grader, still loving homework, still adorable and still wearing the exact same sweater!

Hey, at least I get my moneys worth out of her clothes!

After all my cooking and baking for Maisie’s meet last weekend I am enjoying a cooking-free week right now…but more on that one later.  So since I’m not cooking anything new this week I thought I’d tempt you with a little delicious food p0rn from the past.  Perfect now that the temps are dropping is my Creamy Tomato Soup Florentine.  This soup is “adult” tomato soup as it’s rich, creamy, healthy and totally wonderful with great depth of flavor from the roasted tomatoes.  Click on the picture to be taken to the recipe.IMG_6763

Metro Retro 2011

Saturday Maisie competed at Metro Retro and as she always does at competitions, she had so much fun!  Overall she had a very good meet but like her last meet Cobb Kick Off, the beam wasn’t her best friend.

IMG_0708eAt this meet Maisie took one fall on the beam but just like her banner on the gym wall reads, she’s still my A-Maisie-ing Maisie!  Even with her fall on the beam Maisie still medaled in all four events and took Second Place All-Around.

I love watching Maisie compete but I swear that I don’t breathe the entire meet as I’m always so nervous for her.  Thankfully I’m the one with the nerves and Maisie just loves and enjoys it.

Here are the obligatory hands in the air pictures and because this is my scrapbook for Maisie, a listing of her scores.

Great meet Maisie and all the North Metro USA Level 3 girls, you Rocked the House!

I mentioned in my previous post and on my Southwest Pasta Salad post on Cook Lisa Cook that I prepared all the food, breakfast, lunch, dinner and all the desserts for the visiting & home Coaches as well as the Judges for the gymnastics meet at Maisie’s gym on Saturday.  For the desserts I wanted all little pick-up cookies, pastries and bars so that it was neat, there wasn’t much waste and everyone could quickly grab a sweet treat or two between their sessions.  I did serve some of my “old” stand-by favorites like Oatmeal Coconut Raspberry Bars, Lemon Squares, Rolo Brownie Bites and Lime Jewels and I also added some wonderful new cookies to the mix including these little Walnut Roca Squares which were a real winning recipe.  I originally made these for us to enjoy a number of weeks ago and we loved them so much I had to make them again as I knew they’d be perfect for the meet and they were!  Click on the picture to be taken to the recipe.IMG_0456e

Peace, love and gymnastics

IMG_0682eToday Maisie competed in her third gymnastics meet of the season.  Metro Retro was a home meet and all the girls marched in wearing retro clothes.  As always Maisie had a blast competing and being with her friends and teammates.  Overall she had a very good meet and I hope to get pictures and a video up in the next day or two but for now, just a few pictures from before the meet started.

IMG_0691eMaisie and Coach Megan looking oh-so cool.

IMG_0695eMaisie and Aspen.

IMG_0719eResting…I mean stretching before the meet.

I love watching Maisie compete and couldn’t image not watching her but I find the meets very stressful and even now, hours later I’m still so very keyed up and I need to relax a bit and get some sleep!  On days like this I sort of wish that I was a drinker because I could use one.

Then too it’s been a stressful and busy week as I was asked to make all the meals, breakfast, lunch and dinner for the home and visiting Coaches as well as the Judges.  So I have been cooking, baking, cooking and baking this past week.  One of the items that I made for lunch was a Southwest Pasta Salad and oh was it beautiful looking and wonderful tasting!  Click on the picture to be taken to the recipe and make this pasta salad because it is awesome!IMG_0667e4

Playtime, pizza & cupcakes

IMG_0652eLisa & Briana came to play today and as always the girls, big and little, had a nice day.  Lisa & Bri tagged along as I ran a last minute errand then we took the girls to GiGi’s to pick out cupcakes for after lunch.  We returned to the house where the girls played and Lisa watched as I cooked and proved to be a valuable asset in being my taste tester.  She was a great taste tester too as she tried and enjoyed everything.

For lunch the little girls enjoyed “gourmet” (frozen) pizza while Lisa and I dined on Fire Roasted Tomato and Chicken Tortilla Soup.  Lisa declared the soup delicious and said she’s going to make it at home.  You too can make it at home, just click on the picture to be taken to the recipe.Fire Roasted Chicken Tortilla Soup

It was a fun day but it ended too soon as Lisa & Bri had late afternoon plans and Maisie had her swimming lesson & gymnastics practice.  Tomorrow is Metro Retro, Maisie’s third meet of the season so she’s off to bed early tonight and hopefully will sleep so that tomorrow she’ll be well rested and ready to do her best.

Wishing everyone a great weekend and if you’re looking for something delicious to make, check out some of the recent recipes I’ve posted over on Cook Lisa Cook including: Mango Lassi, Stir-Fried Asparagus with Water Chestnuts, Ginger & Cashews, Curried Roast Chicken Pieces with Spicy Sweet Potato & Carrots, Grilled Corn & Bacon Pudding, Oriental Chicken Salad, Potato Salad with Bacon, Coffee Crusted Steak, Home Style Chicken Curry, Watermelon FrostyMango Gazpacho, Toll House Double Stuff Oreo Brownies, Long Beans with Walnuts, Blacksmith Pizza, Rhubarb Crisp, Laksa, Math Book No Bake Cookies, Aloo Gobi, Mint Lassi, Red Curry Chicken, Lamb Curry, Grilled Corn, Avocado & Tomato Salad with Honey Lime Dressing, Baked Egg Cups Two Ways, Thai Peanut Salad, Holy Guacamole, Cantaloupe Agua Fresca, Wallaby Darned, Piggy-Out Cookies, Wicked Good New England Lobster Roll, Long Beans with Garlic, Super Simple Summer Shrimp Salsa Salad, Grandma’s Teriyaki Steak, Watermelon Tomato Gazpacho, Red Chinese Long Beans with Peppers & Red Curry, 24-Layer Crêpe Cake Fig & Watermelon Salad, Grilled Chèvre & Fig Panini, Spicy Asian Cucumber Salad, Grilled Prawns, Spicy Brown Sugar Bacon, Kicked Up Piggy-Out Cookies, Pesto Pita Pizza, Cilantro Lime Chicken, Nutella Crêpes, Mango, Lime & Chile Spiced Ice Box Pie, Roast Beef & Garlic Herb Cheese Sandwich, Layered Crespelle with Bolognese, Fresh Mozzarella & Basil, Jamaican Jerk Meat Pies, Nutella No Bake Cookies, Velvety Mac & Cheese, Welsh Cakes, Tom Yam Ghoong (Spicy Shrimp Soup) and Lime Jewels.

Multi-tasking Girl

On Sunday we had a nice, stay in our PJ’s, play games, cook and lay low at home kind of day.

IMG_0616eMaisie and I made some Lime Jewels but she was more into eating her Veggie Stix than actually helping me.

IMG_0630eShe was of course much more interested in the Lime Jewels once they were ready to eat.

IMG_0635ePutting on the charm trying to get me to say yes to her getting the entire plate of cookies.

These Lime Jewels are one of my favorite cookies, light, tangy, crunchy, delicious and to top it off, they freeze really well and I’ve been known to eat them straight from the freezer, they’re just that good!  Click on the picture and make these cookies, you won’t be disappointed.IMG_0621e

Giraffes

Waaaaay back in April when I was participating in M3’s 30 posts in 30 days I asked people for some blog ideas.  Most of the requests were for recipes and more pictures of Maisie.  I’ve made a good effort in getting more recipes posted over on Cook Lisa Cook and I hope that everyone is enjoying them.  I also managed to post a lot more to this blog, 163 days in a row of all things Maisie and though my daily posting stint ended I’m doing my best to keep posting pretty regularly.

One different request came from my Utah bloggy bash 2006, 2007 & 2009 as well as Beijing travel pal Julie.  She asked me about all the giraffe stuff in my house and how my interest in giraffes got started so that is today’s post and sorry Julie that it took so long.

I have no idea where my love of giraffes came from and I’ll say that I don’t collect them as I don’t go out searching for giraffe items nor do I buy giraffe items all that often but I do seem to have a good number of giraffe items in my home and come to think of it, in my wardrobe.

IMG_6418I think that my very first giraffe is the large one in this picture.  In our previous home we had a big foyer and when I saw this guy, right away I pictured him in that foyer and so it was a done deal.  Funny as I’m writing this and thinking about when I got him, I couldn’t tell you the year or even the season but I know for a fact that it was the day after I was rear-ended in Eammon’s SUV.  The other-guy’s insurance provided a rental SUV and I remember being thankful that they did same-for-same as I never would have been able to fit the giraffe into my old Volvo.

It was a year or so later that I saw the medium sized giraffe and it happened to be on sale for a great price so I figured it would be a good companion to the larger giraffe.  The baby giraffe was a gift.  Maisie says that we have a Baba, Mama & Maisie giraffe, a perfect giraffe family for our family.

IMG_6419This painting was also purchased when we lived in our previous home and it hung in the guest bedroom.  Now it hangs in the little foyer of the Master bedroom suite.

IMG_6431In the Master bedroom there are two giraffes, both named Gregory.  Back in 2001 Eammon gave me the larger giraffe for Valentine’s Day and I’ve slept with him ever since!  When we started the paper chase for Maisie I thought that it would be fun for her to have her own giraffe so after searching online I found one being sold on Ebay so I purchased him.  I didn’t give the giraffe to her right away but once she got a bit older and started wanting my giraffe I brought out her baby giraffe and she decided that they should both have the same name.  So we have matching big & little Gregory giraffes.

IMG_6423Maisie’s bedroom had lots of animals but mostly giraffes.  There were more giraffe items in her nursery when she was a baby, a giraffe shelf, a giraffe height chart and her bedding and window treatments had giraffes but those things have moved on to new homes.  I have almost finished changing over Maisie’s bedroom from the safari themed nursery to her Princess palace.  Only one thing remains to do which is to replace the animal mural with a Cinderella’s carriage and then I’ll hopefully take some new pictures.  I mentioned to Maisie that I was taking all the baby stuff and animals out of her room and she said that she wanted to keep the big animals so since she still wants them, they’ll be staying for a while.

IMG_6425Maisie has some other special giraffes in her room.  This adorable pink giraffe was sent by our friend Julie along with a wonderful giraffe dress which Maisie loved to wear and which she unfortunately outgrew otherwise she’d still be wearing it because we loved it.

IMG_6534I purchased this yellow chenille giraffe for Maisie as I thought it was so cute and girly.

IMG_6440Maisie loves moving the big giraffe from her bedroom to the family room so that she can play on him.

IMG_6434This little cutie used to sit on the fireplace hearth in our previous home and he also sat on the hearth in this home…well until Maisie and all her toys came along and took over that space.

IMG_6527No room is immune from a bit of giraffe, these are some finger tip towels in our first floor guest bathroom.

IMG_6436In my kitchen I have giraffe salad serving utensils that a friend gave to me.  I’ve never used them but for years now they have been displayed in the pig chef’s pitcher.

IMG_6432While in Beijing we went to the cloisonné factory and this vase was calling my name but it was a tiny bit more than I had wanted to spend.  I hemmed and hawed but with a little nudging from Julie telling me that I’d regret it if I didn’t bring it home, I made the purchase.  And she was right, I would still be kicking myself if I hadn’t made this purchase.

I do have some giraffe clothing including a giraffe jacket, clogs, a shirt and a cute little skirt but no pictures of me wearing them…oh well.

Giraffe MaisieFinally, the cutest giraffe around was from way back in 2008 in my Where’s Maisie post.  This was the one and only time that Maisie wore the costume…oh well, she was so cute as my little giraffe.

Maisie asked if I would make a special treat for her and I thought that she was going to ask for something candy filled or with frosting but no, my girl asked if I would make some Spicy Brown Sugar Bacon.  I’m telling you, this stuff is like crack, one taste and you’re addicted.  I promised her that I would make some soon but as she nearly downed an entire pound last time, this time I’ll double the recipe so that we don’t get our fingers bitten off should we try and take any from her.  Click on the picture to be taken to the recipe.IMG_9704e2

Our time

Again this past Wednesday Maisie asked to go pottery painting.  I really enjoy these special afternoons together, just me an my girl.photo (5)Our weeks always seem so busy so to have a few hours of just girl time, out of the house, away from distractions and doing things that she enjoys, well it’s good fun.  Also nice is that because she finishes school at 1:20, we’re off and doing our fun activity time together before most schools even let out for the day so it’s always like having a private studio.

Our weather has definitely cooled down and soup is on the menu.  This wonderful Lasagna Soup is hearty, filling and a wonderful cool or cold weather meal as it will warm you inside and out.  Click on the picture to be taken to the recipe.IMG_6746

It’s a Maisie thing

IMG_0516eThis was Maisie “comfortably” enjoying a little treat after school & homework on Monday.  She is one interesting and funny little girl.

IMG_0521eHer treat was half a sheet of Mega Candy Buttons…she was one happy little girl.

Today I posted a wonderful new recipe over on Cook Lisa Cook for Tom Yam Ghoong, an absolutely delicious spicy Thai shrimp soup.  If you can get all the ingredients you must make this soup as it’s off the charts wonderful and with the weather just now starting to cool down a bit, this soup makes a wonderful meal.  Click on the picture to be taken to the recipe.
