Maisie loves feeding the birds

I’m still playing catch up with my Aruba posts.  I’ve just been so busy that finding the time to post has been difficult and even though the posts have been mostly pictures, I just haven’t been able to get them up, thus another back dated post.

Each day after lunch I’d microwave pop a bag of popcorn to take to the beach for our afternoon snack.  I’m positive that the birds enjoyed more of it than we did as Maisie loved feeding them.  I’m not a bird person but since the time Maisie was a little girl she’d sit perfectly still for long periods of time on the beach, trying to get the birds to eat out of her hand.  Through the years she’s been very successful and patiently feeds the birds each day we’re on the beach.

Definitely not bird food but absolutely delicious are these Thin Mint Irish Coffees that we’re sipping on right now, so I figured I’d share.  These are quite strong and tipsy delicious.  In fact, I should now get off the computer before I drink any more and start typing gibberish.  Just click on the picture for the recipe.

Walks with Grandpa

When Maisie was younger and we’d be in Aruba, she’d easily wear out five adults with all the walks she wanted to take along the beach.  Now that she’s older she’s happy to play more in the water and sand so not as many walks.  She still liked walking with Grandpa but she didn’t drag him as far as in previous years.

The last of my cooking challenges over on Cook Lisa Cook while I was away was the Improv Cooking Challenge where our two required ingredients this month were eggnog and cranberries.  I decided to make some wonderful Eggnog Popovers with Cranberry Butter, YUM!!  This would be a perfect breakfast Christmas morning as it’s delicious and the flavors of the season.  Click on the picture to be taken to the recipe.

Gotcha ~ Five years a family

I can not believe that it’s been five years since a scared, timid, pensive and very serious wee little Wan Chun Miao was placed in my arms.  I swear that every year I say the same thing and here I go again, I can’t believe that it’s been five years already and that its only been five years.  The time since Maisie joined our family has flown by but on the other hand, I barely remember a time before Maisie.  Every year I love my girl more and more and couldn’t imagine our lives without her.

We don’t make a big deal out of Gotcha/Family Day but it’s fun that we are always away on holiday having fun times together.

In 2008 I was so sick that I totally forgot to take a picture as I spent all my time sleeping in a chaise on the beach in Aruba, bad Mama!

On a completely unrelated note, tonight for dinner we enjoyed one of my favorite soups, Tom Yam Ghoong.  Yesterday I made a huge double batch so my freezer is now stocked.  Now this winter when I get a craving for a hot and steamy bowl I’ll be all set.  Click on the picture to be taken to the recipe.

Tradition ~ Breakfast with Grandpa

One of the things that Maisie looks forward to doing in Aruba is having her breakfast with Grandpa.  The two of them share a private breakfast together each morning out on the patio.  It’s sweet to watch them together and nice too that my Father is up early and eats breakfast with Maisie so that I don’t have to rush out of bed…yes a special time for Maisie and a true holiday for me!

As I mentioned in my previous post, I had a couple of cooking challenge posts which automatically posted to Cook Lisa Cook while I was away.  The first one was my Secret Recipe Club submission, a delicious Texas Chicken with Lime Butter.  My second recipe post was for the Crazy Cooking Challenge where all the participants went looking out in blogland for what they considered the ultimate fudge recipe, made the recipe and posted it.  For me the ultimate fudge recipe was an insanely delicious Biscoff Fudge which didn’t last very long in our home.  Not only was it delicious but it was super simple to make with no real cooking and only five ingredients.  Click on the picture to be taken to the recipe.

Ahhhhhhh…….

I’m playing catch-up here and backdating some posts because Eammon, Maisie and I just returned from our annual Aruba trip.  We spent two weeks relaxing, basking in the sun, playing in the sand and surf, eating great food, enjoying tropical cocktails, spending time with my parents and hanging with friends.  Untitled 0 00 08-02eMy 5PM happy hour view of the world.  More pictures and posts to come now that I’m back to real life again.

I had a few cooking challenge posts scheduled which posted over on Cook Lisa Cook while I was away but I got so pressed for time before we left that I didn’t schedule posts here on Moments with Maisie so to those of you who emailed, concerned that something may have been wrong because of my lack of posts, thank you for your concern.

The morning that we left Atlanta for Aruba was the day of my Secret Recipe Club reveal over on Cook Lisa Cook and I posted a fabulous recipe for Texas Chicken with Lime Butter.  I will be making this chicken time and time again as it was fabulous.  Just click on the picture to be taken to the recipe.

Teammate love and a bit of silliness

Maisie loves all the girls on her gymnastics team and I have to say, they are oh-so cute together.  The girls spend three afternoons a week together but with all the hugs hello and goodbye, you’d think their time together was rare and limited.

photo e It always make me happy to see how excited they are seeing one another and all the hugs hello and that they’re sad to say goodbye, so more hugs.  It’s wonderful that Maisie not only loves being at the gym but also adores her teammates.

photo (7)eOh and when they see a picture being taken, they all love to get in on the fun.

Picking pumpkin seeds

IMG_2283eMaisie wasn’t happy when her mini pumpkins from our annual trip to the maize maze started to rot.  Since she couldn’t save the pumpkins we decided to save the seeds and we’ll try growing them next year in our garden.

Not that I used fresh pumpkin (I used canned) but this Praline Pumpkin Cheesecake is pumpkin-y delicious.  Just click on the picture to be taken to the recipe.

Scooter time with Grandpa

Friday was a fun and busy day for Maisie.  It was Shop till you Drop at her gym which essentially meant that she got to go run around and have fun at the gym and I got some time to shop…or just relax, which is what I ended up doing.  After being at the gym Maisie went home with one of her teammates, Alyssa, where she spent the remainder of the afternoon playing and having a blast.  While at Alyssa’s house Maisie rode around on Alyssa’s scooter and when she got home asked if we could finally put hers together as I’ve had it out in the garage for months.

IMG_2532ePutting the scooter together sounded like a good Grandpa and Maisie activity.

IMG_2533eIt didn’t take long before the two of them were outside together.

IMG_2537eThey stayed out until Maisie got too cold to scooter any longer.

Are you a potato lover?  What about garlic?  Butter?  Well I adore all three and these Hasselback Potatoes with Garlic Sour Cream are just about the most delicious thing ever!  Click on the picture to check out the recipe and don’t hate me if you make these and can’t stop eating them, they’re honestly that wonderful.
