While she was working on her necklace I was preparing a salad using watermelon, figs and mint all picked fresh from our garden (well the figs were from our next door neighbor’s tree.) This salad was absolutely delicious and I’ve now eaten it for lunch two days in a row and will probably make it three or more as it’s that wonderful.
It is a Fig & Watermelon Salad with Vidalia onions, chèvre and mint on a bed of arugula with an orange fig balsamic & Dijon vinaigrette …heavenly!!
