Gym Dogs vs. LSU

photo (8)eThis has been a rough week as I managed to come down with a wicked head cold which is doing me in and Maisie has been having some major congestion problems and may now also have a bit of my cold.  Even though we were both under the weather and dragging, today was fun as Sophie and I took Brooke & Maisie out to Athens to watch gymnastics as the Gym Dogs hosted LSU.  It was good fun, the gymnasts were amazing and Georgia won!! 

Maisie is still having what we think are some allergy issues.  Maisie was initially (blood) allergy tested for just the top 100 allergies and she only showed wheat, egg and dairy as a problem and with her new gluten, egg and dairy free diet she’s doing much better, especially with her mood but she’s still having some major congestion.  We visited her pediatrician a week ago Friday and she sent us to an ENT thinking that maybe Maisie’s adenoids were the problem.  So this past Friday the ENT checked out her tonsils and adenoids and both were thankfully small and okay so no surgery but now the ENT wants further allergy testing as he thinks that other allergies are causing her issues.  So this coming Wednesday afternoon we see an allergy doc and hopefully we’ll have some answers and get my girl feeling better!!

Between being sick and the cold weather I have wanted nice hot, easy & comforting meals and this Sweet & Spicy Apple Pork is one of my absolute favorites.  This recipe is so simple to make either in the oven or a slow cooker and I love making a big batch so that I always have some in the freezer for when the craving strikes.  This pork is perfect served over rice, noodles or as part of a pulled pork sandwich.  Though it doesn’t make for a pretty picture, it is beyond delicious and I highly suggest that you give it a try.  As a suggestion, this pork would be perfect for tailgating or for a Superbowl party and trust me, all your guests will licking their plates, thanking you and asking for your recipe.

    Very sorry to hear about your yucky cold and more possible allergies for poor Miss Maisie. Hope you two are feeling better very soon!

  2. I hate allergies. Alex has so many. He has seemed to out grow many of them the older he has gotten. He has food and outside allergies. I hope the same goes for Maise.
