CAT scan update

IMG_3374e We have been on quite the medical merry-go-round lately trying to figure out what’s going on with Maisie and all her congestion.  Her pediatrician sent us to an ENT to get her adenoids checked out but those were fine.  The ENT suggested that there may be additional allergies and that we should see an allergist.  The allergist ran further allergy tests which thankfully showed no additional allergies.  He then recommended that Maisie have a CAT scan which she did last week.

Fast forward to yesterday when Maisie and I returned to the allergist to get her CAT scan results.  The CAT scan showed that Maisie has a major infection in her sphenoid sinuses and the doc said that it could have been there for ages.  The doctor explained that sphenoid sinus infections are often very difficult to treat because of a few reasons.  Blood vessels in sinus tissue tends to be extremely small so only small amounts of blood pass through to them.  Also, the sinus cavities are somewhat isolated from the circulatory system so when using oral antibiotics, the antibiotics are often cleaned up by the liver before they can travel through the narrow passages to the deeper recesses of the sphenoid sinuses.  To overcome these problems a broad spectrum antibiotic is used for a longer period of time.

After leaving the allergist we picked up Maisie’s prescription for a 28 day course of Augmentin which will hopefully be enough to knock out the infection.  Unfortunately though, one of the side effects of the medicine is diarrhea and this afternoon that started hitting her hard so she's been quite upset and not feeling well with that.  This evening I spoke with Maisie’s pediatrician who explained that the Augmentin is stripping away all the good bacteria in Maisie’s body so I needed to add back in some of the good stuff to help calm down the diarrhea so that she can tolerate the antibiotics.  So right before bedtime a freshly bathed and pj clad Maisie and I headed to the pharmacy to pick up a probiotic which will hopefully do the trick.  Maisie’s now sleeping peacefully which I’m hoping continues through the night.

For Valentine’s dinner I wanted to serve something delicious and red so lobster it was.  Here they are all piled up after being steamed to perfection.  No recipe for this one but tomorrow a new Improv Cooking Challenge recipe will post over on Cook Lisa Cook so please check it out, along with lots of other delicious recipes already posted.

Cubbie Maisie

photo eJust a cutie-patootie iPhone picture of Maisie in one of the cubbies at her gym.  Maisie was waiting for her friends to get dressed after practice so that they could get to school.  Maisie’s always speedy getting dressed for school…the other two, well not so much.

I posted a new recipe over on Cook Lisa Cook but it comes with a warning NOT to make it.  Just like my Spicy Brown Sugar Bacon this snack is “crack” because after just one bite you’re addicted and before you know it you’ve eaten the entire batch, are jonesing for more and thinking up excuses to make another batch or three or four so that you can actually share some while getting your fix.  Check out the recipe for Malted Pretzel Crunch and if you decide to make it, just double or triple the recipe and know that you’ve been warned.

Valentine’s House

IMG_3213eMaisie is not really a crafty girl as she often doesn’t have the patience to sit for long periods of time coloring, painting or crafting as she much prefers to be moving but one thing she does love is decorating foam holiday houses.  In the past Maisie has made a few different foam projects.

IMG_5234 Feb 2009 She made a sweet Valentine’s house (February 2009)

IMG_5602 April 2009 Her next project was an Easter house (April 2009)

IMG_3511[2] She then made a spooky Halloween house (October 2010)

IMG_4665[1] Nov 2010Then along with Grandma’s help she made a foam Christmas tree (November 2010)

IMG_3211eSince Maisie enjoys doing these so much I now pick up the houses on the after holiday sale and tuck them away with the holiday decorations so she’ll have them to make.  One thing I have found when making these is that we need to hot glue the house together before adding the decorations otherwise the house is too flimsy when she presses the stickers on.  The foam houses are always fun projects for us to do together and so much neater than making houses out of gingerbread and frosting.  On top of it, Maisie has saved each house which she wouldn’t be able to do had it been made of cookies and candy.

Last Sunday I posted a picture of my Dark Chocolate Dipped Candied Lemon Peel and said that I would be using them on my Crazy Cooking Challenge recipe and to please come back and check out the recipe and then I went along, posted the said recipe over on Cook Lisa Cook but never linked it up here.  Well I need to change that as this recipe was fantastic and I’d hate for you to miss it.  Our Crazy Cooking Challenge this month was to search non-celebrity blogs looking for the ultimate chocolate cake recipe.  Once we found what we thought was that ultimate recipe we were to make and feature that recipe and the blog where we found it.  I found an absolutely fabulous recipe and I changed it up a bit to come up with my Double Chocolate Meyer Lemon Mousse Cake.  I adore the taste of dark chocolate and lemon together and this cake was perfect, delicious and stunning.  I hope that you’ll click on the picture to check out the recipe and that you’ll give it a try.  Trust me, you’ll be delighted with the results.

Almost

Yesterday when I dropped Maisie at school, her teacher Miss Lisa was putting up a new cork board display showing a graph of how many deciduous teeth each child in the class has lost and when I arrived today to teach sign language the board was complete.

photo EMaisie is 2 years younger than some of her classmates so it’s no wonder that she’s not up there with the number of teeth lost but it’s interesting that the the two boys, who are the same age as all the other girls, are holding on to their teeth a lot longer than the girls.

photo (2) eMaisie hasn’t yet lost any teeth (and her dentists thinks it will be next winter before she starts) but Miss Lisa didn’t want to leave her without anything on her line so she cut out a special “almost!” tooth for my little full-set cutie-patootie…So sweet!

Today after school Maisie had a CAT scan of her sinuses to see if we can find a reason for all her nasal congestion.  Maisie was a bit scared but was very brave and stayed perfectly still for the scan.  It will be next week before we see the doctor and get the results but I hope that soon we will have some answers and a solution so that she can start feeling better.

I guess it’s a good thing that Maisie still has all her teeth as she’s been munching on one of my newest treats for her, Crunchy Fudgy Heart Bites.  They’re no-bake, super simple to make, Maisie “safe”, chocolaty, sweet, healthy and in cute little heart shapes so perfect for Valentine’s Day.  I know that they’d be a hit with any child, big or little as neither Maisie nor Eammon could stop eating them.

Pizza with Tia

photo (8)eThis has been a long, long week as Maisie hasn’t been feeling great, I’ve been sick and Eammon was away in Germany on business.  Then to finish the week, on Saturday I had to work at Maisie’s gym as there was a meet.  So by Saturday afternoon there was no way that I was going to cook dinner.  With Maisie’s allergies it’s difficult to just go out to a restaurant so it was nice to find a new pizza place right around the corner from the gym that along with “regular” pizza offers a gluten-free and vegan cheese pizza, a “safe” for Maisie option.  I had planned to take a mid-afternoon break from the gym to have dinner with Eammon and Maisie so they picked me up at the gym along with Tia, Maisie’s teammate who happened to be hanging around the gym as her Mom worked and we headed out for pizza.  Maisie and Tia were all giggles and silliness and enjoyed each other and the pizza.  After dinner Eammon dropped Maisie, Tia and I back at the gym where the girls watched some of the competition and I worked until it was time to head home and fall into bed exhausted.

Tomorrow a really wonderful and Maisie “safe” Secret Recipe Club recipe will post over on Cook Lisa Cook so please check it out.  On Tuesday a totally delicious yet not Maisie “safe” recipe for my Crazy Cooking Challenge will post but I posted a little sneak peak teaser of Dark Chocolate Dipped Candied Lemon Peel which are a little part of that recipe.  I love these candied peels as the tartness of the lemon is offset perfectly by the chocolate.  I swear that every time I walked by the tray I had to grab a few to snack on.  So please check out this recipe and come back Tuesday to see what I made using these little treats.

Allergy testing

photo (8) eMaisie has still been suffering with major congestion, so-much-so that she wakes multiple times each night because she’s completely stuffed up and can’t breathe.  After a recent visit to her primary care doc it was suggested that we get her adenoids checked out so last Friday we visited the ENT.  He checked Maisie out, scoped her nose and said her adenoids (and tonsils) were small and looked great so they weren’t the problem.  He then suggested that we see an allergist for more extensive allergy testing.  Today was that day so I picked Maisie up a bit early from school and we headed to the allergist.  Poor little Maisie had her back covered with test sites but she was a brave little girl and kept a smile on her face while I felt queasy, but what else is new as I’m not good when tests are performed on me or her.  In the end Maisie didn’t test positive for any additional allergies which is great but it doesn’t give us any answers.  Now the allergist wants Maisie to have a CAT scan to see if something is going on back in her sinuses causing her congestion.  Hopefully we’ll have some answers soon so that Maisie can breathe, sleep and feel better.

I have had a wicked head cold for the past two weeks and truly it has wiped me out.  The past few nights I have crawled into bed either with or even before Maisie because by the end of the day I have had nothing left.  Needless to say we have been eating a lot of dinners from the freezer and I’m thankful to have lots of single serving bags of my Cheaters Chicken Soup as Maisie and I have been living on it lately.  Even with all our congestion the hearty flavor of the soup still comes through and tastes delicious.  Click on the picture to be taken to the recipe.
