2012 Ultimate Classic

IMG_5516eToday Maisie and her teammates competed at the 2012 Ultimate Classic.  Maisie had a really good meet, medaling in all four events and taking first place All-Around.  So proud of my A-Maisie-ing Maisie and all the NMGC girls.

I am especially proud of Maisie with her beam routine as the beam has been her nemesis and she’s conquering it, looking more and more solid with her routine each and every meet.

After almost three weeks of being sick, two courses of antibiotics, steroids, codeine cough syrup, a day in the ER od high dose IV antibiotics, steroids & pain killers and breathing treatments, days of my voice being possessed by Barry White followed by a boozy two pack-a-day Brenda Vaccaro, I’m finally feeling & sounding just about normal and getting my energy back.  Since I’ve been so sick, I’ve done very little cooking, thank goodness I have lots of homemade meals prepared in in the freezer.  I did though cook a very special Tribute recipe which will be posting Monday at noon so please check out Cook Lisa Cook for that special recipe. 

Today, since it’s still zucchini season and I’ve been posting zucchini recipes lately with my Crispy Zucchini Chips, Zucchini with Onion & Brown Sugar and Bacon & Cheese Zucchini Fritters, I thought that I’d feature a sweet treat zucchini recipe from my archives, Zucchini Lemon Cookies.  I wish that Maisie’s allergies didn’t prevent her from having these as she adored them and would love to have them again…maybe someday, or maybe I can figure out a gluten, egg and dairy free version.  These cookies were really wonderful and I need to make them again before zucchini season comes to an end.  Click the link or the picture to be taken to Cook Lisa Cook and the recipe.
